Blueberry and Marzipan Brioche
An indulgent sweet treat that’s quick and easy to prepare. Healthy too, with Blueberries that are bursting with flavour and a rich source of antioxidants.
- Use a zester to pare thin curls of lemon rind and set aside.
- Squeeze two tablespoons of lemon juice, place in a small saucepan with the marmalade. Heat gently until melted. Add the blueberries and heat gently for a further two minutes.
- Lightly toast the Brioche slices on one side. Remove from grill, turn the slices over and grate an even layer of marzipan over each slice.
- Return brioche to the grill and cook until the marzipan just begins to melt and takes on a golden colour.
- Transfer to serving plates and finish with a generous helping of yoghurt. Spoon the warm blueberry mixture over the top and sprinkle with the lemon zest.
