Blueberry and Marzipan Brioche

An indulgent sweet treat that’s quick and easy to prepare. Healthy too, with Blueberries that are bursting with flavour and a rich source of antioxidants.
 
  1. Use a zester to pare thin curls of lemon rind and set aside.
  2. Squeeze two tablespoons of lemon juice, place in a small saucepan with the marmalade.  Heat gently until melted. Add the blueberries and heat gently for a further two minutes.
  3. Lightly toast the Brioche slices on one side.  Remove from grill, turn the slices over and grate an even layer of marzipan over each slice.
  4. Return brioche to the grill and cook until the marzipan just begins to melt and takes on a golden colour.
  5. Transfer to serving plates and finish with a generous helping of yoghurt. Spoon the warm blueberry mixture over the top and sprinkle with the lemon zest.

You will need:

  • 1 Unwaxed lemon
  • 75g Lemon marmalade
  • 175g Blueberries (fresh or frozen)
  • 4 Thick slices of a brioche loaf
  • 75g Marzipan
  • 125g Greek Yoghurt
